Il est avéré qu'Henri IV fut un fin buveur, baptisé au Jurançon à sa naissance et autoproclamé "sire d'Aÿ" parce qu'il eut une préférence passagère pour le rouge gouleyant du village champenois. Il apprécia également les vins d'Arbois et d'Orléans, mais on sait moins qu'un jour d'orage de l'été 1578, le Béarnais, qui n'était encore que roi de Navarre, tomba sous le charme d'un Saint-Emilion très féminin. C'est l'historien André Castelot, dont un membre de sa famille fut un temps propriétaire de ce domaine, sis à Saint-Sulpice-de-Faleyrens sur la route de Libourne à Bergerac, qui raconte cette histoire dans l'Histoire. Fuyant l'orage soudain, le Vert-Galant et sa suite trouvèrent refuge à l'hostellerie du Bousquet, tenue par les époux Bigaroux. "Il trouva le vin si bon, écrit Castelot, et la jeune femme de l'aubergiste (Marion) le reçut avec tant d'empressement" qu'avant de reprendre la route le lendemain matin, il crut bon de récompenser ses hôtes. D'où l'autorisation accordée de transformer leur humble demeure en "maison noble" dotée des attributs seigneuriaux coutumiers : à savoir deux élégantes tourelles et un pigeonnier pourvu de 400 alvéoles, qui est de nos jours le plus important de toute l'Aquitaine.
